Ingredients:
6 chicken legs, skin removed
3 Tbs suya spice
3 tbs butter
½ red onion, sliced
3 medium tomatoes, deseeded and quartered
Salt to taste
Method:
Preheat the oven to 360 oF.
Toast the suya spice for about 2 minutes in a frying pan on medium heat. Mix the toasted spice with the butter and set aside.
Make about 3 cuts in each chicken leg and rub thoroughly with salt and the suya butter. Place the chicken legs in the baking tray in one layer. Toss in the onions and tomatoes and bake for 20 minutes.
Serve with rice or potatoes.
